Happy Cinco de Mayo! 

If you’re like us, you’re happier when you’re sipping a margarita in the sun, especially on the 5th of May 🙂

Many equate Cinco de Mayo as being similar to the American 4th of July, but it’s actually a holiday designed to celebrate the euphoria of an unlikely victory against overwhelming odds; when the Mexico beat the French during the Battle of Puebla.  The story goes, the French were invading Mexico in order to collect on some unpaid debts, and so they sent an army that was beyond massive and far better equipped in order to quickly handle business, and collect on those pesos. 

The Mexicans struggled to defend the road to Mexico City until they reached Puebla, when they made a valiant stand, and won! Although they did not win the war in the end, this special, yet unlikely, triumph is remembered every May fifth. You never know what you can accomplish until you try!

Coconut Margaritas

What better way to celebrate than with a creamy coconut margarita? Cindy Rahe at @HungryGirlPorVida has come up with a delicious concoction for the perfect blend below! 

Ingredients: 
¼ cup toasted coconut flakes
1 tbsp. sugar
¼ tsp. kosher salt
Zest of 1 lime
2 oz. canned coconut milk 
1 oz. fresh lime juice
2 oz. silver tequila
1 oz. Cointreau (or triple sec)
1–2 oz. simple syrup 
Ice

Instructions: 
1. Start by making the toasted coconut rim. Use a blender to blitz the toasted coconut, sugar, salt, and lime zest until combined and the coconut becomes powder. Pour the mixture onto a plate, and spread out into an even layer.
2. In a mixing glass, combine the coconut milk, lime juice, tequila, triple sec, and simple syrup, and stir to combine well. Wet the rim of a glass with a wedge of lime, and dip the rim into the toasted coconut mixture. Fill the glass with ice, and pour the margarita mixture over it. #MyDomaineEATS

No Cinco de Mayo is complete without fresh guacamole! Cukery has created a super easy 3 step guacamole recipe that is so easy, you’ll still be able to prepare it after you’ve had a few margaritas 😉 Just be careful not to chop your fingers!
